4 salmon darnes, skin on or off
Lime Ginger Marinade:
1 tbsp extra virgin olive oil
1 tbsp honey
1 large lime, juice and zest
1 tsp ginger, grated
1 tsp salt
⅛ tsp black pepper, ground
Pre-heat your oven to 180ºC. In a small bowl, whisk all the Lime Ginger Marinade ingredients together. Spread ¾ of it over the salmon fillets. Marinate for 10 minutes.
Place the salmon in a parcel (Cooking bag/parcel available at Flanagan’s). Spread the remaining portion of the marinade and seal the parcel. Bake in the oven for 12 minutes, or until fish flakes easily. Serve with rice.
