6 tbsp mayonnaise
3 tbsp coriander
3 tbsp fresh lime juice
2 to 3 tbsp Wasabi paste
1 piece fresh ginger (about 2/3cm), peeled and finely chopped
1 tbsp vegetable oil
4 skinless salmon fillets
6 tbsp Mirin
1 tbsp soy sauce
4 heads baby bok choy (Halved lengthways)
Salt & pepper
In a blender, combine mayonnaise, coriander, lime juice, wasabi, ginger and 1 tbsp of water. Blend until smooth, add water if necessary, the sauce should be thin. Season with salt and pepper and set aside.
Drizzle the salmon with a little oil and bake for 10/12 minutes, or until the fish flakes easily. In the meantime, add Mirin and soy sauce in a large pan, and bring to the boil over a medium-high heat. Add bok choy; season with salt & pepper. Cover and cook until tender, for 3 to 5minutes. Drizzle the salmon with wasabi sauce and serve with Bok choy.
