450g white fish fillets, such as haddock or cod, skinned & cut into chunks
4 tbsp fresh wholemeal breadcrumbs
2 tbsp snipped fresh chives
1 x 400g can chopped tomatoes
50g button mushrooms, sliced
Salt and ground black pepper
Place the fish, the breadcrumbs and chives into a food processor. Season with salt and pepper. Process until the fish is finely chopped, but still has some texture.
Divide the fish mixture into about 16 pieces, and mould them into balls.
Place the tomatoes and mushrooms into a wide saucepan and cook over a medium heat until boiling. Add the fish balls, cover and simmer for 10 minutes, until cooked.
Serve with spaghetti.
